3 RECIPES FOR FALL

I'm sad that summer is almost coming to an end, but I'd be lying if I said I wasn't a little excited to get back to the city in a couple weeks. I've moved to a great neighborhood in downtown Chicago {Gold Coast!} and I'm about ready to jump back in to the swing of things. 

Since I am using the move and new school year as the start of something new, I haven't tried any of these delicious looking recipes, so here is just a few I've gathered up my favorites that I'm going to test out. In a later post, I'll recap how it went and how I liked them. I love to cook, but I rarely do anything extravagant, so this will be a test for me. The first test of real adulthood.

Stir Fry Zucchini Noodles / I have never had zoodles because I love real noodles too much, but this sounds too good to pass up!

2 yellow onions
4 small zucchinis

1 tablespoon of Soy sauce, low sodium
2 tablespoons of Teriyaki sauce, low sodium

1 tablespoon of Sesame seeds
2 tablespoons of vegetable oil
 

Balsamic Chicken & Veggies / I think this looks so good that I might have to make an attempt to cook this sooner than when I planned. It also says that it is to be cooked all in one pan!

This recipe is 3-4 servings

1 1/4 lbs of chicken breast tenderloin

1 lb of asparagus
1 cup of grape tomatos
1 1/2 cups pf matchstick carrots

3 tbsp of Balsamic vinegar
1 1/2 tbsp of honey
3/8 cup of Italian dressing
 
1/8 tsp of red pepper flakes
Salt and freshly ground pepper as you please

2 tbsp of olive oil

 

Garlic Cream Cheese Mashed Potatoes / This is the one I'm most excited for. I have been eating these my whole life, but I'm going to attempt to make them on my own for the first time...wish me luck. 40 minutes.

10 large garlic cloves
2 lbs of Russent potatoes

1/2 tsp of black pepper
1 tsp of salt

1/2 cup of butter
8 oz of cream cheese
3/4 cup of milk
